Can you bring a salad, or are there too many of those already offered?

My fave this time of year is a really simple combination of chunks of vine-ripened tomatoes, seedless cucumber and red onion, tossed with a vinegar-and-oil-type dressing of choice. I usually use something like a balsamic vinegar with sun-dried tomatoes or some variation on Italian dressing.

It is very easy to make, can be made ahead of time with no loss of quality, is pretty healthy and good quality, flavourful tomatoes in season, is generally well received.

Very close to this last weekend's salad, [livejournal.com profile] reslbear's Orzo Summer Salad. Dave's making a couple loaves of Blueberry Cornbread. I'm leaning toward some sort of veggie or entree dish.

That's a great idea... fresh and seasonal. I make that with chunks of fresh made mozzarella and a good balsamic vinegar, both of which which are fortunately quite readily available

Cook soba noodles until not quite done. Drain, rinse, chill in ice water and let drain again. Toss with sliced Chinese style BBQ pork, chopped green onions, soy sauce, peanut oil, and a bit of sesame oil. And you're done.

When I did potlucks, I always brought meat of some sort, as it seems that no one ever brings meat.

One of my favorites were Armour meatballs cooked in gravy.

Dominic liked doing cocktail franks in a mixture of orange marmalade and grape jelly.
