Schmaltz: Fat, most often chicken fat, rendered during the making of soup, cooled, and used for cooking, flavoring, or as an aphrodisiac to attract Jewish men.

I've never had chicken soup with matzoh balls from a proper Jewish Deli.

I'm so ashamed.

When I was in high school, a friend's mother was always giving me schmalz on rye as a snack when I stopped over after school. It was delicious!

schmalz = wonderful!!! I really miss having a good Jewish deli out here... Chicago was full of them.
I did find a Jewish grocery store where the owner made his own Kishke... it was wrapped in Chicken skin, rather than derma and it was wonderful. The store isn't open on Saturdays (of course) but I but Kishke on Sundays... things like kreplach, matzo balls have to be homemade... I dream of thinly sliced brisket on real Jewish rye with horseradish and a side of gefilte fish....*sigh*
